What is extended maceration in coffee?
It's a controlled fermentation that lasts longer than usual, where the bean stays in contact with its mucilage for an extended time. This develops aromatic compounds that evoke wine, macerated fruits, and panela (raw cane sugar), generating a more intense and complex profile.
Why does Bronce taste like grapes and macerated fruits?
They're compounds generated during the extended maceration of the Honey process. There are no additives: all the flavor comes from how we manage fermentation and drying of the bean.
Is whole bean coffee really better than ground?
Yes, especially for delicate and wine-like aromatic profiles like Bronce. The notes oxidize quickly once ground. As whole bean, you preserve them until the moment of grinding.
What type of grinder do I need?
We recommend a burr grinder (manual or electric). Blade grinders heat the bean and produce an irregular grind.
How long does whole bean coffee last once opened?
Up to 60 days in an opaque airtight container, away from light, heat, and humidity. Grind only what you're about to brew.
Do you ship throughout Colombia?
