A coffee we know where it comes from
The vast majority of Colombian coffee is blended: batches from many farms that get lost in the same sack. Not ours. Everything originates at Finca Las Mercedes, in Antioquia, and we control it from start to finish: we plant, harvest, process, hull, and roast it ourselves.
That's what makes it a true single-origin coffee: each bag has the altitude, variety, and process printed on it. No intermediaries to dilute traceability—just the coffee as it left the farm.

Tradition, Honey and Natural
Same bean, same farm. The only thing that changes is how we process the cherry — and that changes everything in the cup.

Traditional Coffee
The classic. The cherry is pulped and washed, leaving a clean, sweet, and balanced cup. The best starting point to get to know the origin.

Honey coffee
The bean dries while retaining part of the mucilage, like a natural honey. The result: pronounced sweetness, round body, and notes of honey and panela.

Natural Coffee
Whole cherry sun-dried with its pulp. Controlled fermentation that delivers the most expressive profile: red berries, wild strawberry and a long finish.

What they say about the origin
Frequently Asked Questions
A single-origin coffee comes from a single identifiable location, without blends from various farms or regions. All our coffee is born on Finca Las Mercedes (Antioquia), where we plant, process, dry, hull, and roast it. This allows for total traceability: you know the altitude, variety, and process of each bag.
All three come from the same origin; the processing method changes. Tradition is washed: clean and balanced, with chocolate and caramel. Honey retains part of the mucilage: honey and panela sweetness. Natural dries the entire cherry: intense fruity, with red berries.
You can choose whole bean—to preserve the aromas—or your grind (espresso, V60, French press, AeroPress) when ordering.
Yes. The Colombian Chiva Kit brings together Tradition, Honey, and Natural in three 340 g bags so you can explore the three profiles from the same origin and discover your favorite.
